the easiest, yummiest, healthiest coffee ever (with gelatin!)

Let’s talk about one of my favorite things: coffee!

I’m not someone who can drink coffee endlessly throughout the day. But I thoroughly enjoy my morning cup of jo as much as I NEED it.

For the last year or so, I’ve been making this coffee … and it’s AMAZING. Essentially, it’s coffee, coconut oil, cinnamon, and honey. The coconut oil would typically be gross in coffee, but if you take a moment to blend it in the blender, you magically create  a latte like cup of coffee.

Once I got into the habit of making my coffee with coconut oil, I got out of a habit that I hadn’t really locked into place yet. Not for a lack of trying, mind you. I’d tried. I really tried!

I was TRYING to regularly consume gelatin. After reading over and over again about it’s many benefits, I wanted to consume it on a daily basis. I’m not very good with swallowing capsules or pills, so I knew that was out. Instead, I opted to add it to my morning cup of black coffee.

Everyone swore it wouldn’t taste like beef coffee.

And for the most part, it didn’t.

But there was a hint. An ever-so-faint-hint of beef.

And I mean, come on. That’s gross.

But I did it because I liked getting in the gelatin.

That is … until I found the coconut coffee trick and forgot all about gelatin.

Gelatin, schmelatin.

Fast forward to yesterday. I pulled up this video that discusses some of the healthy tricks we can use to naturally beat wrinkles. One of the suggestions is … OF COURSE … gelatin. Boo. I was back full circle.

I didn’t want to ruin my beloved morning coffee with the gelatin!! But something told me … try it. Just try it.

So, I pulled out my Great Lakes gelatin tub and heaped in a teaspoon of gelatin to my morning coffee mixture. I blended and grimaced as I thought about the beef flavor.

As I poured the coffee out, I noticed how fluffy and foamy it was. It looked AMAZING!

I took a sip. No beef flavor at all. Instead, it just tasted creamier than ever!!!!

I was so excited I think I actually jumped for joy. This coffee is a keeper. I’m thrilled to be adding gelatin back into my diet on a regular basis. And if I were being 100% honest, even if I didn’t care one ounce about my health and just wanted to eat yummy things, I’d continue adding the gelatin to my coffee mixture because it really does add something special!

So, here it is … my new favorite recipe for morning coffee.

  • Take your mug of hot black coffee, and pour it into a blender. (I make my coffee in a French Press … but it doesn’t matter how you prefer to make yours. Any unsweetened coffee will do.)
  • Add in 2 tbs of high-quality coconut oil
  • Add in some cinnamon
  • If you like sweet coffee, add in a heaping tsp of honey (I like mine to have the bee pollen in it for added nutritional benefits).
  • Add in 1 tsp to 1 tbs of gelatin (I like Great Lakes)
  • Blend for a minute.

ENJOY!!!!!!! This coconut oil coffee is so yummy that it has completely broken my Starbucks habit. I would rather come home and make my own coffee than stop at Starbucks. And that’s saying a lot for a girl who used to rack up quite the monthly Starbucks bill! I LOVE when you don’t have to try and break a bad habit. It’s so nice when a good habit just takes right over for you.
