allergen-free chocolate chunk blondies


I have to say … I’m not usually a blondie fan. I prefer chocolate on top of chocolate — with a side of chocolate. But the other day, the Enjoy Life mega chunks were on sale. I grabbed a bag and flipped it over to see what recipe was on the back. Normally, I think I would just pass on by. But for some reason, that particular day, BLONDIE just sounded amazing.

Maybe it was because I was just a few days into my new no-sugar diet?? I don’t know, but whatever the reason, I dumped the chips into my basket and ran straight for the cash register.

It was a moment of weakness and I have since resumed the no-sugar diet : ) But let me tell you … these blondies were a fabulous cheat! So fabulous that I thought I should share it here. I used the recipe on the bag as a guide, though I made some substitutions. Here’s what I ended up with.


1 Cup Brown Rice flour
1 TBS coconut flour
1/2 Tsp Baking Soda
1/4 Tsp Gluten Free Baking Powder
1/2 Tsp Salt
1/3 Cup Walnut Oil
1 Cup Packed Brown Sugar
1 Tbsp Vanilla Extract
Chia Gel (grind 2 tbs chia seeds into powder and then add 1/3 cup warm water)
Enjoy Life Chocolate Mega Chunks (original recipe called for one cup … I used about 3/4 of the bag!)


Preheat oven to 350 degrees.

In a large mixing bowl, mix chia gel, vanilla extract and oil. Add in the brown sugar. Mix until well combined.

Add flour, baking soda, baking powder and salt. Mix well.

Now here comes the good part! Add in the chunks!!!! I ended up using about 3/4 of the bag. As you can clearly see in my picture, my blondes were veeeeery chunky and rich! (I mean, if I’m going to break my no-sugar diet, I’m going to BREAK my no-sugar diet!)

Pour batter into 9″ greased square pan. Bake for about 20 minutes at 350.
